Meet the brains, heart and hands behind Sydney-based catering company Aplenty. With their uncomplicated and considered approach to food, Aplenty has turned all the events they catered into an unforgettable experience — a moment to connect with others through a shared meal. We spoke with co-founder Michaela Johansson to learn more about Aplenty and the foods that define the holiday season. HOW WOULD YOU DESCRIBE APLENTY?
To an outsider — I think Aplenty is a fun, vibrant, unique and dynamic catering/events business!
To an insider — I would describe Aplenty as a space for creativity, support, fun, hard work and excitement! It is an
ever-changing beast that keeps growing and at times needs to pause and take a breather!
WHAT ARE THE FOODS THAT DEFINE THE HOLIDAY SEASON FOR YOU?
When the holiday season rolls around — I’m trying to do the least — which means foods that require very little effort to make them good — peaches, cherries, prawns and oysters are top of the list — there is not much better than pulling up at a picnic, the beach or a friends BBQ with these items in tow. More minimal intervention food!
IS THERE A PARTICULAR DISH OR A RECIPE THAT IS MEANINGFUL TO YOU? IF SO, WHY?
Every year my family has a prawn and mango salad as part of Christmas lunch — it's got crunchy gem leaves, and this yummy sesame and coriander dressing. Christmas is not complete without it!
WHAT IS YOUR NUMBER ONE TIP FOR SOMEONE LOOKING TO HOST THEIR FAMILY AND FRIENDS FOR THE HOLIDAYS?
Summer is the season for effortlessness + it is the best season for produce — so throwing together easy salads is the best way to entertain. I always have stonefruit in the fridge, and love to base salads around that — grilled, fresh, with mozzarella, with herbs, with charcuterie, with cucumber or tomato and a yummy dressing!
HOW WILL YOU BE SPENDING THE HOLIDAY SEASON?
The Aplenty team will be taking a much needed break over the Christmas period! I will be heading to Noosa to see family - Charis will also be seeing family on the Sunshine Coast, Ava heading to Port Macquarie - and the wider team - putting their feet up and enjoying some R&R.
